Asparagus

Our organically-grown asparagus is the Jersey Giant variety.  This variety produces a large spear with a delicate taste.  Our asparagus harvest begins in mid-April and lasts about three weeks.  Currently we have thirty-four rows of asparagus each about 100 yards long.  In 2007 we planted 12,000 asparagus roots.  The asparagus beds take about five years to fully mature.
